GR
German Cockroach
The most common NYC restaurant pest. Breeds explosively — a single female produces 30,000 offspring per year. Lives inside equipment, under appliances, in wall voids near heat and moisture. Requires gel bait + IGR combination treatment. Bait aversion develops if the wrong products are rotated.
AM
American Cockroach
The large "water bug" common in basement areas, utility rooms, and sewer systems. Enters from below through floor drains and pipe penetrations. Requires exterior baiting, drain treatment, and physical exclusion of entry points. Different protocol from German cockroach treatment — most companies treat both the same way.

Inspection Timing
NYC DOH inspects restaurants unannounced, typically between 8am–5pm. If you receive a B or C grade, you can request a re-inspection within 48 hours. We can be on-site for emergency treatment within 4 hours of your call — before and after grading cycles.

Phase 01

Before We Arrive

  • Clear access to appliances — pull out refrigerator, stove, and dishwasher if possible
  • Do not spray any store-bought insecticide. DIY sprays scatter infestations and create bait aversion, making professional treatment harder
  • Identify and note any moisture sources: leaks under sink, drip trays, condensation lines
  • If a commercial kitchen: brief front-of-house and back-of-house staff so no surfaces are wiped between treatment and inspection
Phase 02

During Service

  • Technician performs full species identification — German vs. American roach require completely different protocols
  • Activity mapping across kitchen, utility areas, wall voids, and equipment — every harborage zone is documented before any product is applied
  • Gel bait applied with precision at crack-and-crevice harborage sites; no aerosol sprays that contaminate food surfaces
  • Insect Growth Regulator (IGR) deployed to break the breeding cycle at the nymph stage
  • Service log created with timestamp, technician ID, products used, and next scheduled visit — DOH-presentable documentation
Phase 03

After We Leave

  • Normal kitchen operations resume immediately — no shutdown required
  • Expect increased activity for 24–72 hours as roaches contact bait; this is the treatment working
  • Do not wipe bait placements or apply any cleaning product near treated areas for 5 days
  • You receive a digital service record for your DOH compliance file within 24 hours
